Campsite feasts – Three bean chilli

There’s nothing more comforting when you’re facing a brisk British evening the wrong side of your front door than a hearty chilli.

Cheap as beans to make, and easily done in one pan, this campsite staple makes the perfect family supper. Our version is veggie, so no need to worry about keeping mince cool. If you feel the need for some meatiness, just chop up some vacuum packed chorizo sausage

You will need
1 tin of kidney beans
1 tin of cannelleni beans
1 tin of Black eye beans
1 tin tomatoes
1 onion
Veg such as mushrooms, red peppers and peas
1 tps chilli
1 tps cumin
1 tps Turmeric
½ tps cinnamon
100g chorizo (for meat-lovers)
1 tsp oil
A nice crusty loaf to serve

How to make vegetarian chilli

  • Dice the onions and fry them with the oil over a low heat for around five minutes. If using chorizo then add this now and cook for 10 minutes
  • Add the spices and fry for two minutes, then pour in the tinned tomatoes and stir
  • Rinse and add the beans to the sauce. Leave to cook, stirring occasionally, for around 20-30 minutes or until you can wait no longer…
  • Serve with a loaf of crusty bread and a big smile.
